On a cool and rainy day at the cottage, homemade chicken soup is a perfect meal for the whole family.

Here’s our recipe for preparing it at home before you head to the cabin for the weekend.

Kathy’s Chicken Soup for the Cottage

The great thing about this meal is that you can easily prepare it at home and freeze it in serving-sized sealable bags before you head to the cottage. Not only does it reduce waste, it also takes up little space and nicely acts as a freezer pack in the cooler for the trip to the cabin.

Preparation Time: 25 minutes
Cooking Time: 2 – 3 hours
Makes: 1 large pot

The Ingredients

3 medium size carrots – sliced
3 stalks of celery – sliced
1 medium or large onion – chopped

3 boneless chicken breasts – cut into bite size pieces

1 clove of garlic – chopped fine

2 X 900ml Campbell’s Chicken Broth (Tetra Pack)

1 cup of macaroni or any other pasta product

3 medium size potatoes – cut to bite size pieces

Here’s How You Make The Soup

Brown the chicken in a large pot until it is tender and golden brown. Remove the chicken from the pot and set it aside.

Add the carrots, celery, onion, and cook them until they are tender. Then add the chicken, broth, garlic, and potatoes.

Season with salt and pepper until you get the taste you want.

Let the soup simmer on the stove for 2 or 3 hours depending on how thick you want the soup to be.

Add the pasta at the very end, and cook it until the pasta is tender.

Special Tip:
Check the fridge for any veggies that need to be used up. Fresh or frozen spinach, green beans, turnip, or corn are all good. Any pasta you have will work, such as spinach fettuccine, but you need to break it into thirds.
