A few berries and some passion fruit added to your salad is a tasty way to impress your family and guests at the cottage. This salad is simple to prepare, goes well with any meal, and lends itself to a wide range of variations.

Kathy’s Summer Salad

Preparation Time: 20 Minutes
Makes: One big bowl for four people

The Ingredients You Need

1 head of red leaf lettuce
1 spring mix of specialty lettuce (quart size found in any produce dept.)
1 pint of fresh blueberries
1 pint of fresh raspberries or blackberries or strawberries
1 can of whole segment mandarin oranges
1 generous portion of sliced almonds
1 bottle of poppy seed dressing or raspberry vinaigrette dressing

How to Prepare the Salad

Wash and dry the red leaf lettuce and spring mix of specialty lettuce.
Wash and prepare the fruit.
Mix the lettuce and fruit in a large bowl.
Add the sliced almonds on top.

To make this into a meal you can barbecue some chicken breasts and serve the chicken in strips over the salad in a bowl or on a plate.

Dried cranberries are a great addition or substitute when fresh berries are not available. Apples, walnuts, mangoes and more can also be used to make different versions of this salad. You can even throw in a bit of goat cheese. The cabin is the perfect place to experiment!
