Mini Pizza
Mini pizzas make an easy cottage meal and serve as a great lunch idea for the cabin when you have a hungry gang that wants to eat and run.

In fact, this afternoon snack is so simple to prepare, you can put the kids in charge of the cottage lunch.

Kathy’s Mini Pizza

This cottage meal is easy to prepare, cooks quickly, and is a fantastic option for two people, you and the kids, or even a group of twenty.

Preparation Time: 15 Minutes
Cooking Time: 10 Minutes

The Ingredients You Need
1 jar of your favourite pizza sauce
Buns – burger, hotdog, baguette, pita etc. – any will work
Mozzarella cheese – shredded (500 g)
Olive Oil

Toppings
Whatever you find in the fridge can be used.
Onions, olives, mushrooms, peppers, tomatoes, ham and bacon are all good.

How To Make The Mini Pizzas

Preheat the oven to 400 degrees on the bake setting.
Cut, slice, and chop your toppings.
Slice the buns or baguette in half.
Grease a cookie sheet or any flat pan with a small amount of olive oil.
Spread the pizza sauce over the top of your bread choice.
Cover the sauce with the shredded cheese.
Add the toppings.

Arrange the mini pizzas on the pan and bake for 10 minutes or until the cheese melts and starts to bubble.

Gourmet Options
The great thing with the mini pizza is that you can turn it into a gourmet appetizer by using specialty cheeses, herbs, and creative toppings.

Blue cheese, goat cheese, or cheddar can be topped with sun dried tomatoes or even a bit of arugula lettuce and a dash of olive oil. The buns can then be quartered and served as tasty appetizers.
