Homemade pancakes are a great weekend breakfast idea at the cottage.

Here is a simple recipe for making tasty, fluffy homemade pancakes from scratch at the cabin.

Kathy’s Cottage Pancakes

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 16 large pancakes

The Ingredients You Need

2 cups of all-purpose flour
2 tablespoons of sugar
2 teaspoons of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
2 cups of milk
1/4 cup of vanilla yogurt
1 large egg
1/4 cup of melted butter (vegetable oil / olive oil will also work)

The Gear You Need

Measuring cups
Measuring spoon
Large mixing bowl
Grill or frying pan

How to Make the Pancakes

Mix the flour, baking powder, baking soda, sugar and salt in the mixing bowl.
Whisk the milk, butter and egg together and then add them to the dry ingredients.
Add the yogurt and mix all ingredients well until you have a smooth batter.

Preheat the grill or frying pan to medium heat – a drop of water should sizzle on it.
Grease the grill with olive oil or vegetable oil.

Pour the pancake mix to make whatever sized pancakes you like.
Flip the pancakes as soon as bubbles start to break the surface.

Special Tip:
You can mix in cinnamon, berries, honey or any kind of jam to create your own decadent pancakes.

This pancake recipe is a great idea for a cabin breakfast and is easily adjusted for the number of people you need to feed. For a smaller group you can cut the ingredients in half, or double them for a large group of family and friends.
